FUNFETTI

Just wanted to pop in and give a little update! Being back at school means that not much baking is happening, thanks to communal kitchens and lack of supplies, but about a month ago I had the chance to bake a birthday cake for my dear friend during our Fall Break! A group of friends and I went to a cabin in Asheville for the weekend, and I heard that the kitchen was equipped with a standing mixer (!!!!) so I decided to surprise my friend with a freshly baked cake the morning of her special day.

Unfortunately, budget and time prevented me from getting supplies to make the cake from scratch, hence the super simple ingredients and directions, but I think the cake turned out pretty well regardless. One of my main mistakes was forgetting to bring canola oil with me, so I had to substitute olive oil into the cake mix. That definitely left a strong olive oil scent/taste (if you’re thinking about doing it yourself), but most of the people in the group didn’t notice too much and just thought it was super moist, which is always a good thing!

Makes 1 one-layer 9x9 cake

Cake

1 Funfetti Cake Mix

Eggs

Canola Oil

Whipped Cream

1 cup heavy whipping cream

2 tablespoons granulated sugar

Strawberries/rosemary for garnish

To make cake: Follow instructions on cake mix box. If baking in a glass pan, keep an eye on the cake to make sure it does not over or under bake.

To make whipped cream: In a chilled metal bowl, whip the heavy cream on high speed with an electric mixer using a whisk attachment. When cream begins to thicken, add 2 tablespoons of granulated sugar, if desired. Continue to beat on high speed until fully whipped.
